I have decide to do an experiment.
I am sweet curing at nice bit of brisket with a dry cure mix.
Once this is done I will be adding either a smokey flavour or using a smoking cooker.
Long and slow will be the order of the day, cooking for 4 or 5 hours.

Volunteers will be needed to taste & comment.

Any takers?

NSN ....my mouth is watering :D ,we visited Kentucky last year and fell in love with the way they cooked a lot of their meats,especially the pulled pork :thumbright: ,since then our favourite one is roasting a joint of belly pork rubbed in a Nandos spice rub(either Hot or BBQ) slowly in the oven for 3 hours.I bought some "Bear Paws" off of Amazon(USA) and then just pull it when cooked :mrgreen:

But my favourite meat is BEEF :licklips: ....

We only the other day discussed buying some beef and slow roasting it,would love to know what recipe you are going to use.Btw popped into Lidl yesterday as they have an American theme on ATM and bought a couple of Rubs for meat 1x American Steakhouse Seasoning & 1 x Tex Mex Seasoning :thumbright: :thumbright:
